Nut-Free Chocolate Cake

This nut-free chocolate cake can be used in any of the recipes that call for chocolate cake.

INGREDIENTS

¼ cup (45 g) palm shortening or ghee

½ cup (60 g) coconut flour

¼ cup (25 g) cocoa powder

1 tablespoon arrowroot flour

Pinch of salt

3 large eggs, room temperature

½ cup (120 ml) full-fat coconut milk

½ cup (120 ml) maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon apple cider vinegar

¾ teaspoon baking soda

YIELD

One single-layer (6-inch/15-cm) round cake
